Which part of the tracing process do you find frustrating?
Should be easy - Pen tool, click, move mouse/cursor, click... end so on.

Most likely, you`d get nicer inbetweens if you switched the interpolation method. If you`re drawing in Inkscape once a month, you`ll fail to speed up your drawing with the existing behavior of the drop-down menu BUT if you use it frequently enough, you`ll get used to the existing shortcuts instead ,)

Linked video is almost 10 yr old and even then I was able to have it almost instantly done. I recommended it`s approach and if I were you, I`ll take another look since I think you must have turned left at Albuquerque somewhere along the way ,)

I hope you`ll have enough patience to go trough the table of contents for this chapter of Manual.

As is, it`s difficult to say without knowing how does the photo look like, what method and steps shall be the most efficient.

My experience with late editions and fonts is also not so great but it does look strange to see on your screenshot 1 em as line spacing where it should be 4 or 5. Could it be that you have lowered the opacity of these objects?
Do you have two or more layers with some sort of blending enabled?

For starters...

Upload either your file or just a screenshot to some host and pass the link here. That could resolve the mystery and overcome the language barrier.

Still, if you copy the image on web (right click / context menu / Copy image) - one may paste it (ctrl+v) into Inkscape since that image will be called from cache. I really am not aware of any other program which could handle this type of drag&drop, with the desired outcome.

Most likely, you`re using the bucket tool to apply color on an empty background. That would not work since that tool is meant for applying uniform fill on already created shapes.
